Cookies can be baked in a variety of methods. Some appear more intricate than others. In Pampanga, the buttery Pan de San Nicolas cookies are created using a special type of cookie mold called 'saniculas' molds. These molds are pressed onto the cookie dough to transfer the design on its surface, which is made all the more prominent after it was baked.
The designs on the molds vary but they never fail to have the abstract figure of Saint Nicolas de Tolentino in the center, surrounded by circular and floral patterns. Some of these wooden molds have back-to-back designs, and most have the initials of the owners carved into them as well.
